This recipe has evolved over the years. It first started out as a simple cheesy pasta bake as my son refused to eat meat! He doesn’t like to chew! From one simple dish you can turn it into many!
Serves 4 to 6 depending on portion size!
1 cauliflower head cut into florets
300g wholemeal pasta
25g plain flour
1 pint milk
80g grated cheese
1 mozzarella ball torn into pieces
Preheat the oven to 200C/180C fan/ gas 6.
Bring a pan of water to the boil. Add the cauliflower and cook until just tender, approximately 10-15 minutes. Alternatively, steam the cauliflower for 10 minutes. Do not over cook the cauliflower or it will turn to mush! In a separate pan cook the pasta according to the packet instructions.
Once the pasta and cauliflower are cooked, drain and place in a large oven proof dish, gently stir to mix and put to one side.
To make the cheese sauce melt the butter in a pan and add the flour stirring continuously. Slowly add the milk and keep stirring until the sauce has thickened. Take off the heat and add the grated cheese and stir until it has melted.
Pour the cheese sauce over the pasta and cauliflower and stir gently. Top with the mozzarella pieces. Place on a baking tray and cook in the centre of the oven until the cheese has melted and the top is a golden brown.
- Use half cauliflower and half broccoli.
- Add cooked peas or sweetcorn.
- Add sliced tomatoes to the top of the pasta bake before it goes in the oven.
