Makes two large bowls.  Can be pepared in advance. 

80g porridge oats
1 small tin/can coconut milk approx 165ml
400ml water

Optional – berries, honey or maple syrup to serve

Place the porridge oats in a pan with the water and coconut milk.  Simmer on a low heat for approximately 10 minutes until the liquid has been absorbed, stirring occassioally.  Split the porridge between two bowls and top with berries, honey or maple syrup.

To prepare ahead – soak the porridge oats overnight in the water then simmer with the coconut milk for two minutes until cooked and warmed through.
