A quick and easy dish – serves two.

150g dried pasta of your choice
Two to three slices of smoked salmon, sliced
2 tbsps soft cheese
3 tbsp creme fraiche
Handful of fresh parsley, chopped
100g petit pois
1/2 onion, finely chopped
1 tbsp olive oil
Squeeze of lemon

Bring a pan of water to the boil and cook the pasta.  Follow the cooking instructions on the packet of pasta.  When the pasta is almost cooked, add the peas and cook for a few minutes.

In a saucepan heat the olive oil and saute the chopped onion until it is soft.  Add the creme friache, soft cheese, parsley and seasoning.  Stir thoroughly.  Add the smoked salmon, stir and warm the sauce through.  Add a squeeze of lemon.

Drain the water from the pasta and peas and add to the smoked salmon sauce.  Stir until the pasta is coated with the sauce.  Serve in warmed pasta bowls.
