I have used turkey mince for this recipe as it’s low in fat and a good source of protein.   Beef or pork mince works just as well.  If you want a meatier meatball omit the veg or use less but do make sure you add the onion, garlic and celery.

Serves 4 to 6

Meatball Ingredients
500g turkey mince
1 medium onion
2 garlic cloves
1 celery stick
1 medium courgette
1 medium carrot
Good handful of fresh herbs or 1 tbsp dried oregano or mixed herbs
Salt and pepper

Tomato Sauce Ingredients
1 medium onion
1 garlic clove
1 celery stick
1 500g carton of passata
1 tbsp oregano
1 tbsp tomato puree
Salt and pepper
1 tbsp olive oil

Method for Tomato Sauce
Peel and finely chop the onion and garlic.  Finely chop the celery.  Blitz in a food processor until the ingreidents turn to mush – the recipe works just as well without being blitzed!

Heat the olive oil in a large heavy based pan and gently fry the onion mixture for 5 minutes.  Add the oregano, tomato puree, seasoning and passata. Fill the empty passata carton with water and add to the pan.  Stir, bring to the boil and gently simmer.

While the tomato sauce is simmering peel and finely chop the onion and garlic and put in a large bowl.  Finely chop the celery and herbs, grate the courgette and peel and grate the carrot.  Add to the bowl along with the turkey mince.  Season generously with salt and pepper.  Mix with clean hands until thoroughly combined.


Peel and roughly chop the onion, garlic and carrot and put in a food processor.  Roughly chop the celery, herb and courgette.  Add to the food processor and blitz.  Add the turkey mince and season with salt and pepper.  Blitz to the desired consistency.

The mixture will be quite wet and sticky.  Divide the meatball mixture into evenly sized meatballs about the size of a walnut.  Place each meatball into the tomato sauce and bring the pan back to the boil.  Turn the pan down and simmer.  Cook uncovered for approximately 30 minutes until the meatballs are cooked and the tomato sauce has thickened.  Serve with your favourite pasta.

**Do not stir the mixture for a least 15 minutes or the meatballs may break apart.**


  • The reason this recipe is mostly prepared in a food processor is due to a young child who doesn’t like “bits” in his pasta sauce!
  • The meatball mix is the same as the Impossible Burgers.
