A quick and easy dish – serves four.
300g dried pasta of your choice
Three to four salmon portions, skin removed & cut into bite sized pieces
Small tub of creme fraiche
Handful of fresh parsley, chopped
200g fresh peas or frozen petit pois
One head of broccoli cut into bite size pieces
1 onion, finely chopped
2 garlic gloves, finely chopped
1 tbsp olive oil
Squeeze of lemon
Bring a pan of water to the boil and cook the pasta (follow the cooking instructions on the packet of pasta). Depending on the size of your broccoli florets add them to the pan after the pasta has been cooking for a few minutes. When the pasta is almost cooked, add the peas and cook for a few minutes.
While the pasta, peas and broccoli are cooking, in a saucepan heat the olive oil and saute the chopped onion until it is soft. Add the garlic and cook for a further few minutes before adding the salmon and approx 100ml of water. Stir thoroughly and cook on a low heat until the salmon is cooked through. Add the creme friache, parsley, lemon juice and seasoning. Stir thoroughly and warm the sauce through on a low heat. Do not boil.
Drain the water from the pasta, broccoli and peas and add to the salmon sauce. Stir until the pasta is coated with the sauce. Serve in warmed pasta bowls.
