Try the salad with our Impossible Burgers, a steak, cold cuts or serve as an accompanyment at a bbq.

Serves 6 to 8 as an accompanyment

Ingredients
1 small celariac or half a large one
2 eating apples
75g walnut pieces
Juice of one lemon
5 tbsp greek yoghurt
Handful of parsley, chopped
Salt and Pepper
2 tbsp extra virgin olive oil

Method
Peel and chop the celariac into matchstick size pieces.  Place in a bowl.  Chop both apples into matchstick pieces and add to the bowl along with the lemon juice.  Stir thoroughly.  The lemon juice will stop the vegetables from turing brown.

In a non-stick frying pan dry fry the walnut pieces for a few minutes.  Add to the salad.

In a separate bowl or jug mix together the yoghurt, parsley and olive oil.  Season to taste.

Add the dressing to the salad and stir thoroughly making sure all the sald ingredients are coated in the dressing.

Serve.
