1/2 white or red cabbage
1 medium red onion
2 medium carrots
3 tbsps mayonnaise
3 tbsps Greek Yoghurt
Squeeze of lemon or lime

Peel and grate the carrots and onion and put in a bowl.  Grate the cabbage and add to the bowl with the mayonnaise and yoghurt.  Season with salt and pepper.  Mix the ingredients thoroughly to ensure all the vegetables are coated in the dressing.  Alternatively, use a food processor to grate the vegetables then stir in the yoghurt, mayonnaise, lemon or lime juice and seasoning.

Handy Hints

  • For a creamier consistency add more yoghurt or mayonnaise.
  • For a healthier version use low fat mayonnaise and yoghurt.
  • Great in sandwiches.
