Two kolh rabi, peeled
1 medium red onion
2 medium carrots
3 tbsps mayonnaise
3 tbsps Greek Yoghurt
Squeeze of lemon or lime
Salt and Pepper

Peel and grate the carrots and onion and put in a bowl.  Grate the kohl rabi and add to the bowl with the mayonnaise and yoghurt.  Season with salt and pepper.  Mix the ingredients thoroughly to ensure all the vegetables are coated in the dressing.  Alternatively, use a food processor to grate the vegetables then stir in the yoghurt, mayonnaise, lemon or lime juice and seasoning.
