A very versatile dish.  Plain or spicy?  An ideal accompaniment to the Impossible Burgers.

1 good sized potato per person
Olive oil

Heat the oven to 180C fan assisted.  While the oven is heating up thoroughly scrub the potatoes (no need to peel) and dry on kitchen paper.  Cut the potatoes into wedges.  Add the wedges to an oven tray and add the olive oil ensuring all the potatoes are covered in the oil.  Cook in the oven for approximately 30 minutes until the wedges are soft in the middle and brown on the outside.  The cooking time will depend on how many wedges are in the oven tray.

To spice up the potato wedges add 1 tsp of smoked paprika, chilli powder and oregano to the oil olive ensuring the potato wedges are thoroughly coated.  Cook as normal.

Serve as a side dish or a stand alone dish with dips.  The spicy version is ideal with soured cream.
