Serves 4

This is a family favourite in our house.  Quick and easy to make, a one pot wonder dish.  Delicious with a pile of greens and perfect for cold days.  If you don’t want to use dried borlotti beans, tinned borlotti or cannellini beans work just as well, just don’t follow the instructions for the dried beans, add them in the final stage to warm thorough.


The Beans
250g dried borlotti beans
4 fresh sage leaves
2 garlic cloves
Pinch of salt

The Stew
1 tbsp olive oil
10 pork sausages
2 red onions, chopped
2 large garlic cloves, chopped
2 tbsp tomato puree
1 tbsp worcestershire sauce
1 tsp smoked paprika
1 tsp dried oregano
150ml chicken stock
1 tin chopped tomatoes
Salt and pepper

Method – The Stew
In a frying pan brown the sausages.  While the sausages are browning add the remaining stew ingredients to the slow cooker and stir thoroughly.  Add the sausages to the cooker and cook for up to eight hours.  One hour before the end of the cooking time add the cooked borlotti beans.  Season to taste.

Method – The Beans
Soak the dried beans in cold water overnight.  Once soaked, rinse thoroughly and place in a pan with the sage leaves, garlic and a pinch of salt and cover with water.  Bring to the boil and simmer for up to one hour.  Once cooked, drain and remove the sages leaves.  Keep the crushed garlic for extra flavour.
