Serves 6 (and more)

A heartwarming cassoulet style dish.  As this is quite a meaty dish, you can make it stretch further by serving less meat per person and adding a portion of green vegetables and/or mashed potato.

Ingredients
1 tbsp olive oil
6 good quality pork sausages
6 boneless, skinless chicken thighs
300g gammon joint, visible fat removed
2 large carrots, peeled and thickly sliced
1 celery stick, diced
1 onion, finely chopped
2 garlic gloves, finely chopped
1 large thyme sprig
600g jar of passata
100ml water
2 x 400g tins of cannellini beans
Salt and Pepper

Method
Heat the oil in a frying pan and brown the sausages.  Add them to the slow cooker along with all the other ingredients except the beans and seasoning.  Stir to combine and cook on low for upto 8 hours.  One hour before the cooking time has ended, add the beans and test the seasoning.  Add salt and pepper if required and cook for the remaining hour.  Once the casserole is cooked, remove the gammon joint and shred it using two forks.  Return to the slow cooker and stir thoroughly.

Serve.

Handy Hint
If you don’t want to buy a gammon joint, replace it with bacon or pancetta.
